Sunday night dinner was a success! These burritos are the greatest and they are SUPER easy! ![]() Corn and Bean Burritos: 1 small onion 1 zucchini 2 cloves of garlic 1 cup of corn 1 can black beans 1 tbsp cilantro 2/3 cup pepper jack cheese salt and pepper Fry onion, zucchini, and garlic until onion browns and zucchini is soft. Add corn and beans. Mix well and cook for 5 minutes. Remove from heat and add cilantro and cheese. season with salt and pepper.
