Cilantro Lime Soup is a favorite at our house! It is healthy and so easy to make! You can make it in a Slow Cooker or on the stove. It is seriously one of our go-to meals and the kids and husband love it!! #winwin
CILANTRO LIME SOUP:
2 tbsp olive oil 1 medium onion 8 cloves of garlic 1 bunch of celery 2 chicken breasts 12 cups of chicken broth 1 medium zucchini 1 cup brown rice 1 can diced tomatoes 1 can diced tomatoes with green chilies 2 tsp oregano 2 tbsp cumin 1 tbsp lime juice 1 bunch of cilantro 1 medium avocado tortilla chips sour cream cheese
-Dice the onion and cook over medium heat until tender. Add garlic and let it cook for one minute. Add chopped celery and cook with the onion and garlic until tender. -Add the chicken breasts to the pot (I usual add them in frozen). Add chicken broth, zucchini, rice (uncooked), diced tomatoes, oregano, and cumin. Mix and bring the pot to a boil. Let it simmer for an hour or until the chicken and rice have been cooked. -Remove the chicken and shred or dice. Return the meat to the pot. -Rinse the cilantro and roughly chop the leaves. Add the cilantro and lime juice to the pot, stir and serve. -Best served with avocado, tortilla chips, sour cream, and cheese.
*This can also be combined into a slow cooker. I cook mine for 4 hours on high or 6 hours on low.
